Rendang is a traditional Indonesian dish that is made by cooking beef or mutton in coconut milk and spices over a low heat for several hours until the meat is tender and the sauce has thickened. It is usually served with rice and other side dishes. Here is a recipe for beef rendang:


Ingredients:


2 pounds beef, cut into small cubes

1 cup coconut milk

1 cup water

3 tablespoons vegetable oil

2 large onions, finely diced

6 cloves garlic, minced

1 inch piece of ginger, minced

2 stalks lemongrass, bruised and cut into 2-inch pieces

1 cinnamon stick

4 whole cloves

2 star anise

1 teaspoon cumin seeds

1 teaspoon coriander seeds

1 tablespoon tamarind paste

1 tablespoon brown sugar

1 teaspoon salt

2 tablespoons chili paste (such as sambal oelek)

2 tablespoons finely chopped fresh cilantro, for garnish


Instructions:

Heat the oil in a large pot over medium heat. Add the onions, garlic, and ginger and cook until the onions are soft and translucent, about 5 minutes.

Add the lemongrass, cinnamon stick, cloves, star anise, cumin seeds, and coriander seeds to the pot and cook for another 2 minutes.

Add the beef to the pot and cook until it is browned on all sides.

Add the coconut milk, water, tamarind paste, brown sugar, and salt to the pot and bring to a boil. Reduce the heat to low and simmer for 2-3 hours, or until the beef is tender and the sauce has thickened.

Add the chili paste to the pot and stir to combine.

Garnish with cilantro and serve with rice and other side dishes. Enjoy!
